Garlic Beet Hummus
Makes 2 cups
Prep time: 10 minutes
Ingredients:
- 1 medium (or 2 small) beets, halved and steam until fork tender
- 1 (15-ounce) can chickpeas, drained and rinsed
- 6 large cloves garlic
- 2 tablespoons tahini
- Juice of one large lemon
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- ¼ cup olive oil
Directions:
- Add steamed beets, chickpeas, garlic, tahini, lemon juice, salt and pepper to a food processor or blender and pulse until mostly smooth. Scrape down the sides with a spatula as needed.
- While the machine is running on low, slowly drizzle in the olive oil. Mix until smooth.
- Serve immediately garnished with a bit of minced garlic or a drizzle of olive oil. Refrigerate leftovers in an airtight container for up to one week.
