Roasted Ranch Broccolini
Serves 2

Ingredients:
- 1 bunch broccolini, chopped into 1-1/2 inch pieces
- 2 tablespoons butter, melted
For the dry ranch mix:
- ½ teaspoon dried dill (or 1 teaspoon fresh, finely chopped)
- ½ teaspoon dried parsley (or 1 teaspoon fresh, finely chopped)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Toss chopped broccolini in melted butter and spread on a baking sheet. Make sure to leave a bit of space between pieces to allow steam to escape.
- Roast broccolini for 7-10 minutes, rotating once halfway through.
- Meanwhile, add the dry ranch ingredients to a small bowl and mix well. Taste and adjust seasonings as desired.
- Once broccolini stems are easily pierced with a fork, remove from the oven. Sprinkle the dry ranch mix on stop and stir well. Serve immediately.
- Store leftovers in an airtight container in the refrigerator for 2 to 3 days.
